As the temperature in Maryland is dipping down I just want to put on my big comfy sweater, grab some warm apple cider, watch a romantic comedy and make comforting food. I know you're with me. Jared (my boyfriend) loves french toast with powdered sugar and vanilla drizzle, which obviously includes eggs and milk. So you can imagine how difficult it is to make breakfast for a vegan and non vegan where we both end up happy. You may say alternative cooking never turns out right, or it's a waste of time. Trust me I can't tell you how many times I've made muffins or other baked goods that ended up tasting like crap or looking like gooey nonsense. Well after many flops I've made a successful french toast recipe that is boyfriend/vegan approved!!! It tastes exactly how french toast should.

Now the star of show is the BREAD! We were on a mission to find a yummy vegan bread that still tasted good to both parties (tough job.) We found a seven grain crunch bread at our local organics market (Spring Mill bread company.) Just be sure to check out the label if you're worried about what it's made of! 

This recipe is great for a Sunday morning with a nice cup of coffee and a loved one to enjoy it with. I have to say cooking is one of my favorite things to do with Jared, and I encourage you to try it. It makes you feel all toasty inside

Fall French Toasty Recipe!

Prep Time: 10-15 mins   |   Cook Time: 5 mins

 Dry Ingredients: 

  • Pinch of salt
  • 1/2 tsp freshly ground nutmeg
  • 1 tsp of cinnamon 
  • 2 tsp of organic unbleached flour (coconut, almond, etc.)
  • Bread loaf of choice (6 thick slices)

Wet Ingredients:

  • 1 tsp of vanilla extract
  • 1 tablespoon of REAL maple syrup (plus extra for the finished product) 
  • 1 cup almond milk 
  • 2 Tablespoon of pumpkin puree
  • Coconut oil (for the pan)

Optional:   Powdered sugar  |  Thinly sliced apple  |  Apple butter  |  Jam

 

Combine & whisk together the cinnamon, nutmeg, flour, salt, vanilla extract, maple syrup, almond milk, and pumpkin puree. Make sure the bowl is big enough to dip your bread in and has an even flat surface. 

When you're ready to start this fall morning party, evenly coat both sides of your bread slices in the mixture (make sure to shake off excess liquid.) 

Heat up the coconut oil in large skillet. Medium-high heat. Wait till the pan's hot, then add in a slice and cook each side for a few minutes, or until you see some golden brown goodness. Repeat with all the slices!

Once complete, tie it together with a dab of Earth Balance butter, a drizzle of maple syrup  magic, and some thinly sliced apples. If you're feeling sweet and adventurous, sprinkle on some of that powdered sugar.


 
 

French toast be bangin'!!!

 

Tip: If you're looking for the super crispy edges, pop the toast on a pan and set the oven to 300°. Let it go for as long you feel necessary, making sure you check on it often do you don't end up with burnt toast!!!
